A cafe menu is read standing up, from behind someone else, by a person deciding in about fifteen seconds. Everything follows from that: coffee and food split into two obvious halves, sizes and milk options stated once instead of repeated per line, and type set large enough to read across the counter. These layouts also expect to be edited weekly and run off on an office printer, so nothing depends on full-bleed colour or a paper stock you have to order.
